Yummy recipe! I had to use stewed tomatoes and was worried it would hurt the recipe, but it gave it a really good dimension. I would try using the canned tomatoes it calls for or try fresh next time. The flavor is slightly sweet and savory. I made it in an 8qt IP with PNP fingerling potatoes, which I mashed, and some green beans.
