- 1 Tbsp. chili powder
- 2 tsp. ground black pepper
- 1 tsp. ground cumin
- 1 Tbsp. ground cinnamon
- 2 Tbsp. unsweetened cocoa powder
- 3 kosher salt (heavy pinches)
- 2 lb. pork chops (cut into approximately 1 x 1 inch cubes)
- 1 Tbsp. unsalted butter
- 1 Tbsp. olive oil
- 1 yellow onion (large, finely chopped)
- 4 cloves garlic (finely diced)
- 1 btl. beer (porter style, nothing too hoppy, I used Great Lakes Porter.)
- 28 oz. crushed tomatoes
- 16 oz. salsa (good quality, I like Green Mountain brand)
- 15 oz. black beans (with liquid)
- 15 oz. red kidney beans (with liquid)
- 15 oz. pink beans (with liquid)
- 2 cups beef stock (good quality)
- 1 cup strong brewed coffee
- 2 Tbsp. soy sauce
- 1 green bell pepper
- 1/2 cup semi-sweet chocolate chips (though if you have bittersweet that will work too)
- 1 Tbsp. chili powder (ancho)
- 3 cloves garlic (finely diced)
- 1 Tbsp. unsalted butter
- 3/4 cup tortilla chips (finely crushed, they will resemble rougher bread crumbs)
