- 1 cup tomatillo salsa (recipe to follow)
- 10 corn tortillas (yellow)
- 3 oz. cheese (semi-soft yellow, that melt well, like mild cheddar, caciocavallo or Kasseri, just make sure you use a good one, shredded)
- 6 oz. queso fresco (crumbled)
- 2 poblano peppers
- 10 tomatillos
- 1/2 cilantro (a bunch of)
- 1 garlic (big clove of)
- 1 jalapeno pepper
- 3 Tbsp. lime juice
- 1 Tbsp. oil
- 1/2 tsp. salt
- 1/8 tsp. black pepper
- 1/8 water (a cup of, to thin it out a bit, optional)
