  • 2 1/2 cups self-rising flour (sifted)
  • 1/3 cup sugar
  • 1 egg
  • 2 tablespoons melted butter (plus additional for brushing)
  • 1 teaspoon vanilla extract
  • 1 1/2 cups milk
  • maple syrup

    Directions

    1. Mix flour and sugar in a large bowl. Whisk egg, butter and vanilla in a small bowl. Gradually whisk into flour mixture. Gradually whisk in milk until batter is a pouring consistency.
    2. Heat a nonstick skillet or griddle on medium heat. Brush pan with a little butter. Pour 1/4 cup of batter into pan, to make a circle. Cook for 2-3 mins, or until bubbles start to appear on the surface. Turn and cook a further 1 min until golden. Cover to keep warm. Repeat with remaining batter.
    3. Serve with butter and maple syrup.
