- 1 onion (medium, chopped)
- 3 cloves garlic (crushed or finely minced)
- 1 lb. lean ground meat (extra)
- 14 oz. low sodium diced tomatoes (with liquid)
- 5.5 oz. low sodium tomato paste
- 1 Tbsp. dried oregano
- 1 Tbsp. dried basil
- 1 tsp. hot red pepper flakes (but not if you are using hot Italian sausage meat, like me)
- salt
- freshly ground pepper
- 12 lasagna noodles
- 2 cups part-skim ricotta cheese (one 500 gram tub)
- 2 cups part-skim mozzarella cheese (grated)
- 1/2 cup grated Parmesan cheese (freshly, Parmigiano-Reggiano is the very best)

This is a perfect lasagna recipe, and my family absolutely loved it! I used mild Italian sausage and gluten free noodles, and since I was out of tomatoes I used a 28 oz jar of traditional, very mild spaghetti sauce. And the layering was much simpler than other recipes I've tried. Best lasagna I've ever made. Thanks so much for my new go-to recipe for perfect lasagna!

The perfect lasagna. I used a little extra spice and a little extra cheese but otherwise made it as the recipe advised. The noodles were a little al dente and chewy. Completely delicious!!!

Our favorite recipe. I use 3lbs of turkey or beef, sometimes mix in Italian sausage. Also will finely chop zucchini and/or spinach to hide in the sauce. I overseason with the herbs than what’s called for in the recipe but it’s cooking with the soul and it’s so yummy

It was perfect!
I modified it to be keto friendly. I used Crepini egg wraps for the “lasagna noodles”.

i used cottage cheese instand. turned out great. thats parley on top with garlic salt pepper parma romano cheese.
