These were better than I expected. My dough was a bit wet, so I added extra almond flour to get the consistency where I could form a ball without it being wet & sticky, them I dusted the ball with a bit more almond flour, separated into the 6 mini balls and coated those each with a bit more flour to get a smooth dough consistency that was easier to roll into long strands. I didn’t have much stevia, so I ended up using about 2 T swerve plus 1t stevia in the cinnamon mixture. I think next time I might try using the swerve brown sugar instead, but the result was still plenty sweet for me. I doubled the frosting mixture, using 2 oz, or 4T cream cheese, with 2T swerve granulated sugar plus 2T swerve powdered sugar. I placed the ingredients in a sandwich baggie with a bit of vanilla & almond extract, then mashed it all together and cut off a corner of the bag after baking to pipe the frosting onto the cinnamon rolls.

Not great - the water messed it up and the dough was nearly impossible to roll out. The icing turned out good though.

I have made per recipe and they were definitely good but I made them again with THM baking blend and it totally ups the ante on them. Instead of rolling them out, I spray a regular sized muffin tin and throw 6 dough balls into the tin. I sprinkle the top with THM gentle sweet along with cinnamon (I didn’t measure and no water)....added a drop of molasses and a drop of vanilla to the cream cheese and voila...deliciousness!! Oh and they def bake for less time I’m guessing around 15 min? I used a bit less baking blend than the recipe calls for in almond flour...maybe a tablespoon or less than the 3/4 c
