I swapped the sugar to be 1/2 white and a scant 1 cup dark brown, reduced the cinnamon to 1 and a half teaspoons, and needed to cook them 10-15 minutes longer (my oven, I guess).
The muffins were really delicious, even warm out of the oven. Definitely a keeper! I might add chopped pecans or a few sultans raisins next time. The muffins don't need to be iced, but could be. Very yummy!

This recipe has more pumpkin than the others I found online so thought it would be moister. However, because of that and some substitutions I made, it cooked unevenly. Flavor was awesome - but stick with the muffin tins! [Substitution notes: Made more than 12 muffins so transferred to one good size loaf pan; used 1/2c maple syrup instead of half of the white sugar; used apple sauce instead of coconut oil. Baked for ~1 hour.]

These were wonderful! So light and fluffy...I added chocolate chips to the recipe (everything is better with chocolate!) and they turned out fabulous. Pecans could be a good addition as well, next time!

Everyone loved these. I added some pecans and chocolate chips and a tad more spice, then frosted lightly with a homemade cream cheese frosting. They want me to make them again. I’ll leave out the chips this time. You can’t taste the coconut oil. 👍

yummyyummyyummyyummy. This might actually be the first ever documented case of a recipe for something claiming to be the best ever actually BEING the best ever. These are so good. I baked for only 18 minutes and they came out perfect

Kids loved it. Very good and moist, felt the batter was dense so added a small splash of milk to the mix before baking

This recipe is amazing!! Both of my sons (who are really picky eaters) loved it. They actually ate nine muffins between the two of them. I'd say it's a hit!! :)

This is my go -to pumpkin muffin recipe. Love that it uses a full can of
Pumpkin. I use half whole wheat flour and improvise in the spices sometimes, but this is Excellent as-is. Best ever!
