Best way to have brats! Mine were really thick, so cooked in crockpot for 4 hours instead of 2. Cooked down the beer onion mixture (I added bell pepper like someone recommended) in a frying pan while brats on bbq and they were so good on top. Served with jalapeño havarti, mustard, and spicy aioli on my bun - YUM! Only way I’ll be making brats from now on.

The brats came out full of flavor. I also added red bell peppers. My crockpot must not run as hot on high because the beer didn’t cook down any. Cooked it down some in a sauce pot while the brats were browning. Given more time I would have cooked them down till the onions and peppers caramelized but they really didn’t need it, they were delicious.
