At the height of summer when fresh blackberries are at their most flavorful and juicy, treat yourself to a classic cobbler with a buttery biscuit topping. The secret ingredient? Blueberries add a little sweetness and jamminess, and including them means you can keep the sugar on the lighter side. Nevertheless, a scoop of vanilla ice cream seals the deal! - cooking oil spray (or softened butter)
- 1/2 cup granulated sugar
- 3 Tbsp. cornstarch
- 1 Tbsp. lemon juice (from 1/2 lemon)
- 1/4 tsp. vanilla extract
- 5 cups fresh blackberries (24 oz., plus a few more for serving if you like)
- 1 cup fresh blueberries (6 oz., plus a few more for serving if you like)
- 1 1/3 cups all-purpose flour
- 3 Tbsp. sugar
- 1 tsp. baking powder
- 1/4 tsp. baking soda
- 1/4 tsp. salt
- 1/4 cup salted butter (very cold)
- 1/2 cup buttermilk (cold, plus 1 Tbsp. more if needed)
- 2 tsp. sparkling sugar (coarse decorating sugar; or use turbinado sugar; optional)

Directions
- Preheat oven to 375°F with a rack set in center. Lightly coat a shallow 3-qt. baking dish (such as a 9x13-inch dish) with cooking oil spray.
- In a large mixing bowl, stir together granulated sugar, cornstarch, lemon juice, and vanilla. Add 5 cups blackberries and 1 cup blueberries and toss gently with a rubber spatula until berries are thoroughly coated. Evenly pour berry mixture into the baking dish.
- Place flour, 3 Tbsp. granulated sugar, the baking powder, baking soda, and salt in the large mixing bowl. Mix with a rubber spatula to combine.
