- 3 celery ribs (medium, diced, about 1/2 cup)
- 1 bell pepper (medium, diced, about 1 cup)
- 1 red onion (large, diced, about 2 cups, reserve 1/2 cup for topping)
- 3 cloves garlic (minced)
- 1 lime juiced
- 3 Tbsp. sea salt
- 2 Tbsp. chili powder
- 1 Tbsp. oregano
- 1/4 tsp. cayenne pepper
- 1/4 tsp. ground black pepper
- cheddar cheese (optional, grated for garnish)
