- 1 sweet onion (or Large Yellow, chopped)
- 1 red bell pepper (chopped)
- 2 large carrots (or half a bag of baby carrots, cut into 1″ long pieces, or chopped)
- 3 celery sticks (large, chopped)
- 3 cloves garlic (minced)
- 4 liters chicken broth (Or make your own chicken broth by cooking 3-4 chicken drumsticks in 1 gallon of water for 30 minutes)
- 2 Tbsp. curry powder
- 1/2 tsp. cayenne pepper
- Himalayan salt (to taste)
- 1/2 can coconut milk (can sub for low-fat coconut milk)
- 1 chicken bouillon cube
- 2 cups cooked chicken (shredded)
- 2 pkg. ramen noodles (and their seasoning)
