These turned out great. I just used what I had on hand which meant subbing regular whole wheat flour instead of gluten free, and using a mix of regular white sugar and maple syrup instead of the coconut sugar. They were super easy and tasty. Next time I’ll actually put a bit less sugar in because they turned out pretty sweet, and I will probably start them at 375 for the first 5 minutes, then drop down to 350 to try to get the tops to rise up a bit more - they turned out a bit flat topped. Otherwise a fantastic, healthy-ish snack, and my kids loved them.
