Berry and Vanilla Yogurt Ripple Ice Pops

  • 1/2 cup sugar
  • 11 ounces frozen mixed berries
  • 1 cup greek style plain yogurt (thick)
  • 1 teaspoon vanilla extract

    Directions

    1. Place sugar and 1/2 cup water in a small saucepan on low heat. Stir until sugar is dissolved. Bring to a boil, without stirring. Cool to room temperature.
    2. Process berries and 1/2 cup of sugar syrup in a blender or food processor until smooth. Whisk yogurt, vanilla extract and remaining sugar syrup in a medium bowl.
    3. Fill six 1/2-cup ice popsicle molds halfway with berry mixture. Top with yogurt mixture. Use a popsicle stick to swirl mixtures together for a ripple effect. Insert sticks and freeze for 8 hours or overnight.
