  • 1/2 cup butter (chilled and diced)
  • 1 3/4 cups spelt flour
  • 3/4 cup ground almonds
  • 2/3 cup granulated sugar
  • 2 1/2 tablespoons ginger (peeled and grated)
  • 1 egg (beaten)
  • 7 ounces raspberries
  • 7 ounces blackberries
  • vanilla sauce (warmed, to serve)

    Directions

    1. Cut butter into spelt flour. Add ground almonds, 1/2 cup sugar and ginger. Add egg and mix to form a crumbly streusel topping. Chill for 30 mins.
    2. Preheat oven to 400°F. Mix berries and remaining sugar in a shallow ovenproof dish and top with streusel. Bake for 25-30 mins until golden. Serve warm with vanilla sauce.
