Description
Sparkling water give these muffins a good texture. This recipe is dairy free and can be easily made vegan by adding egg replacer instead of egg.

- 1 1/2 cup all purpose flour
- 1/2 tsp salt
- 1 tsp baking powder
- 1/2 cup sugar
- 1/3 cup oil
- 1/2 cup citrus or plain sparkling water
- 1/3 cup ricemilk
- 1 tsp vanilla extract
- 3/4 cup berries*

Directions
- Preheat oven to 375 degrees F. Combine flour, salt, baking powder, and sugar in a medium bowl.
- Add egg, oil, sparkling water, milk, and vanilla to the dry mixture.
- Fold in berries. *if using fresh or dries berries just add them as is. However, if the berries are frozen, rinse them in a strainer until the water runs clear and dry.
- Add mixture to paper cup filled or greased muffin tins.
- Bake for 20-25 minutes, turning around at the 10 minute mark or until a toothpick comes out clean.
