Bell Peppers Stuffed With Italian Sausage or Turkey

- 6 red bell pepper (unblemished and firm, medium size Note: Sorry the number of peppers isn't more accurate. It really depends on how big they are and how heaping your stuffing is. Also, try to find peppers that have a relatively level bottom so they can "stand up" on the baking sheet.)
- 1 lb. italian sausage (casing removed)
- 1 cup onions (finely chopped)
- 1/4 cup shishito peppers (Note: If you can't find shishitos substitute any mild green pepper.)
- 1 3/4 cups long-grain rice (cooked, Note: For this recipe I use half chicken stock/half filtered water when making the rice.)
- 1 tsp. fresh oregano (finely chopped)
- 1 Tbsp. fresh basil (chopped, plus extra for serving)
- 2 garlic cloves (minced or pressed)
- 1/4 tsp. celery salt
- 1/4 cup celery (finely chopped)
- 1/2 cup shredded mozzarella cheese (plus extra for the top)
- 3/4 cup freshly grated Parmesan
- 3/4 cup tomatoes (Roasted, and Red Pepper Marinara plus extra for serving)
- 2 Tbsp. olive oil (quality)
- salt
- freshly ground pepper
