DELICIOUS. It’s a huge recipe. I got 24 beignets-balls, scooping dough instead of rolling and cutting them. I used buttermilk instead of whole milk... wonderful texture: crispy on the outside and chewy-fluffy inside. Tossed half the batch in cinnamon sugar, just for fun.
Golf ball-sized dough became a tennis ball-sized beignet! I rolled the balls (deflating them) but traded off on the texture inside. I’d use a smaller spoonful, or punch dough with wet hands, or follow the New Orleans tradition and roll-then-cut.
