- 200 grams smoked eel
- 1 bunch tarragon (small, and a few sprigs for garnish, optional)
- 1 eating apple (small eating, peeled, cored and very finely chopped)
- 1 Tbsp. rapeseed oil (or olive oil)
- 3 Tbsp. apple cider (balsamic, red or white wine vinegar)
- 1/2 red onion (very finely chopped)
- 3 slices bread (of, GF)
- 2 cloves garlic (unpeeled, bashed)
- 3 Tbsp. sugar (or natvia, plus a dash if the tartare is too tart)
- 3 sprigs fresh rosemary
- 3 sprigs fresh thyme
- 2 bay leaves
- 6 cardamom pods
- 250 grams beetroot (leaves removed, washed and scrubbed, halved if large)
- 1 Tbsp. white peppercorns (or black)
- 2 Tbsp. balsamic vinegar
- 150 grams sour cream (crème fraiche, or set, preferably the full fat variety)
- 3 Tbsp. horseradish cream
- 1 Tbsp. vodka (optional)
