- 8 oz. beets (peeled and cooked, chopped, I always buy these to save myself loads of time)
- 6 oz. baby spinach (roughly chopped)
- 1/3 cup shelled pistachios
- 2 avocado (cubed)
- 1/4 cup apple cider vinegar
- 1 Tbsp. cilantro
- 1 Tbsp. mint
- 2 Tbsp. olive oil
- 3 Tbsp. lime juice
- 2 cloves garlic (minced)
- 2 Tbsp. honey
- 1 tsp. Dijon mustard
