It turned out real nice. I didn’t have enough beets so I added a potato and I didn’t have fresh oregano so I used dry and added some fresh basil. I’m planning on eating a lot of beets this winter and this will be one of the ways to do that. Especially on days when whe come home late. Hope my daughter likes it too. But the flavor can easily be changed if necessary.
