Too much beer. I used Deschutes Mirror Pond Pale Ale and Tillamook white extra sharp cheddar, and this turned out a bit bitter for my taste and I usually like bitter. It seemed like a lot of beer - one and 1/3 bottles - and it was. The beer really overpowered everything and the soup was a bit thin too.

Turned Out Great! I used half and half instead of milk and I didn't need the flour for thickness.
