- 8 chicken thighs (skinless or skin-on, about 3 1/2 pounds total)
- salt and ground black pepper (to taste)
- 2 Tbsp. canola oil
- 7 Tbsp. unsalted butter (at room temperature)
- 2 yellow onion (medium, chopped)
- 4 medium carrot (peeled and cut into 1-inch chunks)
- 6 red potato (medium, peeled if desired, cut into 1-inch chunks)
- 14 oz. celery root (peeled, trimmed, halved, and cut into 1-inch chunks, or substitute potatoes)
- 24 oz. porter (2 bottles, or brown ale)
- 2 cups homemade chicken stock (or low-sodium canned chicken broth)
- 2 Tbsp. light brown sugar (packed)
- 2 Tbsp. Dijon mustard
- 2 tsp. tomato paste (store-bought or homemade)
- 1 tsp. dried thyme
- 1/4 cup all-purpose flour
- chopped parsley (for garnish, optional)

For an easier recipe.....I threw all of the ingredients into a instant pot, except the flour, and set it on Pressure Cook for 30 min. I added a stick of butter at the end. I personally hate parsley and garnished with cilantro instead, along with a dollop of sour cream. It was amazing!!!! Perfect dish for the perfect chilly night.
Just a side note: I used boneless chicken thighs and they just fell apart. Yummmmly

Decent flavor. Chicken was very juicy, I use half the beer when I cook with a porter, but this one I could have used all and been fine.
Unfortunately I couldn’t find celery root at my local store. Next time.

Turned out good! Use a bigger Dutch oven, would be the only thing that I would change of my experience.

Great recipe. Did use the celery root and I thought it added a lot of flavor. Also used boneless chicken thighs since that’s all I had. I don’t think it matters what beer you use, I just used a blond ale. I will definitely make it again.

I could not find the same beer but it was good I use a modelo beer like it

This wasn't inedible, but my choice of porter (Great Lakes Edmund Fitzgerald) made the sauce and chicken just a bit too bitter. Normally, porters and IPAs suit me fine for drinking, so I'll try this again with a beer with a lower IBU and see if I still have this issue. Also, fully cooking the veg and reducing the sauce took much longer than the recipe site listed.
