- 2 lb. potatoes (cut into 1″ chunks, peeling is an option)
- 2 cups frozen peas (thawed)
- 6 oz. tomato paste
- 1 Tbsp. Italian herbs
- 1 Tbsp. rosemary (fresh chopped)
- 3 Tbsp. tamari (like soy sauce without the wheat)
- 1/2 Tbsp. smoked paprika
- 1 tsp. salt (or to taste)
- pepper (to taste)
- 2 cups vegetable stock

Loved it. I had to shrink it down to 2-4 servings. Only tweaks I made were adding extra garlic because I love garlic, added about 1 tbsp soy sauce and 1/2 C off-brand lager beer. Loved it. 5 stars for the stew w my add ins and 4 stars for this stand alone beef-less stew

Perfect, simple clear instructions! Spices blended well together, all the vegetables were done to perfection. Thank you so much for sharing this 5 star beef stew (this goes on my twice a month list). God bless you!!

Used sweet potatoes as a personal preference as a bit more on spices as I usually do. Well received

Easy and delicious! All fresh vegetables and I loved thickening the stew just by blending some back in.
