This stuff is so delicious it should be illegal. I was a little short on bacon so I subbed 1/2 pancetta. Used Guinness stout for the beer. SO good over bucatini! The leek adds another layer of aromatics. It's what bolognese wants to be when it grows up! Make it. NOW!
