- 500 grams beef mince (good quality)
- 1 brown onion (150g, chopped)
- 1 Tbsp. olive oil
- 100 grams chorizo (good quality, skin removed and cut into cubes)
- 1 Tbsp. red chilli (chopped)
- 3 cloves garlic (minced)
- 1 green bell pepper (deseeded and chopped into chunks)
- 1 red pepper (same as above)
- 150 grams portobello mushrooms (small, cleaned and cut into chunks)
- 1 1/2 tsp. ground cumin
- 1 tsp. smoked paprika
- 1/2 tsp. ground cinnamon
- 1/4 tsp. cayenne pepper
- 300 mL low sodium vegetable stock (you can use beef stock if you wish, I prefer veg)
- 400 grams chopped tomatoes (tin of)
- 1 Tbsp. tomato puree
- 400 grams red kidney beans (drained and rinsed in cold running water)
- 250 grams black beans (drained and rinsed in cold running water)
- 1/4 salt and ground black pepper (each tsp sea)
- 2 Tbsp. fresh coriander (chopped, + extra leaves for garnish)
