  • 1 tablespoon oil
  • 2 onions (peeled and finely diced)
  • 1 clove garlic (peeled and finely chopped)
  • 1 1/4 pounds ground beef
  • 1 pinch cayenne pepper
  • 15 ounces chopped tomatoes
  • 2 tomatoes (diced)
  • 1/4 bunch fresh thyme (chopped + extra to garnish)
  • 1/4 bunch fresh rosemary (chopped)
  • 4 carrots (peeled and sliced)
  • 1 zucchini (cubed)
  • 1/4 pound feta cheese (crumbled)
  • 3 tablespoons low fat plain yogurt
  • 2 slices rye bread

    Directions

    1. Preheat oven to 325°F. For bolognese sauce, heat oil in a pan and sauté onions, garlic and ground beef. Add cayenne and season to taste. Add canned tomatoes and simmer. Add fresh tomatoes and chopped herbs.
    2. Meanwhile, cook carrots and zucchini in boiling salted water for 3-5 mins. Mix with bolognese sauce and transfer to a baking dish. Mix feta and yogurt until creamy then pour over top and bake for 20 mins. Serve garnished with thyme and rye bread on the side.
