Finally, a meal my picky 9 year old liked! I didn't have any mirin so I substituted rice wine vinegar and added an extra tsp of sugar. I definitely recommend not substituting ground ginger in place of fresh, you won't get that extra yum factor from the ginger juice in the sauce. I marinated my beef for about 4 hours and it was tender, juicy and full of flavor. I will be adding this to our regular dinner rotation. Next time I'll try to have mirin on hand.
