- 1/4 preserved lemon (rind only, finely chopped)

- couscous (steamed, to serve)

- 1 1/2 Tbsp. chilli powder
- 1 Tbsp. ground turmeric
- 2 tsp. sweet paprika
- 1 1/2 tsp. ras el hanout (a North African spice mix, available at speciality food stores and spice suppliers)
- 3/4 cup extra virgin olive oil
