- 3 lb. chuck roast (well trimmed and cut into 3/4 inch dice, Sirloin, cross rib and blade roast can be used as well)
- 3 Tbsp. canola oil
- salt
- pepper (to season the beef)
- 1 small onion (finely diced)
- 4 cloves garlic (finely minced)
- 2 cups black beans (cooked, rinse them if using canned)
- 2 cups tomato sauce (plain)
- 1/2 cup beef stock (or water)
- 2 Tbsp. chilli powder (more or less to taste)
- 1/2 tsp. ground cumin
- 1 tsp. smoked paprika
- 1 tsp. black pepper
- 1 tsp. salt
- 1/2 tsp. chipotle powder (optional if you like it spicey)
- 1 Tbsp. brown sugar (or molasses)
- 2 cups sweet corn (ears grilled, about a)
- 2 green onions (chopped)
- 2 tomatoes (medium ripe, diced)
- 2 Tbsp. Sriracha sauce (or to taste)
- 1 Tbsp. fresh lemon juice (or lime)
- salt
- pepper (to season)
