  • 1 tablespoon olive oil
  • 1 cup onion (chopped)
  • 2 cloves garlic (minced)
  • 1 1/2 pounds ground beef (85% lean)
  • 1/4 teaspoon salt (for beef)
  • 1/8 teaspoon pepper (for beef)
  • 1 cup tomato sauce
  • 1 cup cottage cheese (small curd)
  • 4 ounces cream cheese (chopped into small pieces)
  • 1/4 teaspoon salt (for filling)
  • 1/8 teaspoon black pepper (for filling)
  • 3 1/2 cups egg noodles (cooked and drained, about 8 oz. uncooked)
  • 1 cup cheddar cheese (shredded)
  • 1 tablespoon parsley (chopped)

    Directions

    1. Preheat oven to 350°F.
    2. Spray 9x13-inch baking pan with cooking spray and set aside.
    3. Heat olive oil in a large saute pan over medium-high heat then add onion and cook 2-3 minutes, until translucent. Add garlic and cook another 30 seconds, until fragrant.
