- 2 Tbsp. vegetable oil
- 4 carrots (cut into equal bite-sized pieces, about 2 cups)
- 4 stalks celery (cut into equal bite-sized pieces--if possible use inner stalks and leaves, about 2 cups)
- 2 onions (large, chopped, 1 and a 1/2 to 2 cups)

- 14.5 oz. whole peeled tomatoes (with their juice, broken into pieces)
