  • 6 ounces thick sliced bacon (chopped into 1/4" wide strips)
  • olive oil (to Sautee)
  • 2 1/2 pounds boneless beef chuck (or good quality stew meat trimmed and cut into 1" pieces)
  • salt and ground black pepper (to taste)
  • 1/4 cup all purpose flour
  • 2 cups red wine (good, such as Soft Red or Pinot Noir, see note above)
  • 1 pound mushrooms (thickly sliced)
  • 4 large carrots (peeled and cut into 1/2" thick pieces)
  • 1 yellow onion (medium, diced)
  • 4 garlic cloves (chopped)
  • 1 tablespoon tomato paste
  • 4 cups low sodium beef broth (or beef stock)
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 pound new potatoes (small potatoes, or fingerling, halved or quartered)

    was very tasty! i used my slow cooker instead of baking it, because i dont own a dutch oven or oven proof pot but it worked out well! cooked it on High, for 5 hours. i just followed all the steps, but kept it all in one pot and YUM

    this recipe is delicious! Used America wagyu stew meat. wagyu cooked in bacon fat, idk if anything could be more yummy! this recipe makes a delicious savoy stew.

    My husband enjoyed it and he is not one to like Beef Stew. I would add a little more seasoning to it, but it was tasty. The best part is I finished the bottle with dinner.

    It turned out great. I think I would season the beef with thyme as well and let it marinate before adding it to the mixture. Other than that it was fantastic.

    Very tasty, liked that the majority of the cooking time was in the oven. I thickened it a little after taking it out of the oven using the recipes suggestion of flour & butter. Will make again.

    I dredged in flour and browned the meat prior to putting it in the crock pot. Added whatever veggies I had and let it cook for 4+ hours. Delicious!

    This was delicious. I didn’t measure the salt, so I probably added more than what was called for, but it turned out excellent. Will be my go to beef stew recipe

    Used hard cider rather than wine, because that is what I had in the house. Yum. Will use a russet potato next time.

    2nd time making it, truly delicious. Halved the recipe this time as I only had 1.25 lbs of meat...came out perfect after 1 hr 25 min in the oven.
