- 800 grams potatoes (maris piper)
- 1 glug olive oil (plus extra for oiling)
- 7 grams dried yeast (fast-action)
- 500 grams strong white bread flour (plus extra to dust)
- 100 grams pasta flour (‘00’)
- 1 Tbsp. caster sugar
- 1 Tbsp. fine sea salt
- 75 mL warm water
- free-range eggs (Beaten , to glaze)
