I’ve made this several times. I mix up the veg quite a bit, add different fruit, and use ribeye as the sirloin is not kabob friendly-too tough.

Turned out good! I boiled the potatoes instead of using the microwave, and I also seared the meat before adding it to the sauce and veggie mix.
