- 1 inch ginger (roughly chopped)
- 4 cloves garlic (roughly chopped)
- 4 shallots (large, roughly chopped, about 7 ounces)
- chili pepper flakes (to taste, I used about 3 tablespoons)
- 2 Tbsp. vegetable oil
- 2 lb. beef shanks (or shortribs cut into large cubes)
- 2 stalks lemongrass (white part only, smashed)
- 4 lime leaves (kaffir)
- 1 inch galangal (sliced into coins)
- 1 can coconut milk
- 2 coconut cream
- 1 Tbsp. brown sugar (palm sugar, can be substituted)

Went for a short cut with the sauce on my third attempt. This is very popular with the family--real comfort food, and pretty easy to make with some practice.

This was a really fantastic recipe. Had a great, rich flavor. Would definitely recommend, and will certainly be making it again!
