- 500 grams noodles (dried pho)

- 500 grams topside steak (thinly sliced)

- 3 tsp. coriander seeds
- 2 tsp. fennel seeds
- 3 cardamom pods (lightly crushed, pods discarded and seeds only)
- 1 cinnamon sticks
- 2 lemon (halved)
- 5 Tbsp. salt
- 500 grams oxtails
- 500 grams bone marrow (chopped into 7cm pieces, ask your butcher to do this for you)
- 2 kilograms beef brisket (on the bone)
- 500 grams beef (flank)
- 500 grams beef ribs
- 1 daikon radishes (peeled and halved)
- 120 grams salt
- 200 grams yellow rock sugar (or rock sugar, crushed)
- 200 grams cilantro leaves
- 200 grams spring onions (chopped)
- 200 grams thai basil leaves
- 200 grams herbs (sawtooth, optional)
- 4 limes (cut into wedges)
