- 1/4 cup vegetable oil (divided and more oil for frying shallots)
- 12 oz. sirloin steak
- 2 eggs
- 8 oz. dried rice noodles
- 2 Tbsp. soy sauce
- 2 bunches broccolini (thick stems removed and the rest diagonally into 2-inch pieces)
- 2 Tbsp. soy sauce (paste, a thick Chinese soy sauce that is slightly sweeter. I've never tried this but a substitute is 1.5 tbsp of soy sauce and 1 tbsp. of honey.)
- 2 Tbsp. oyster sauce
- 1 pinch white pepper
- 1 piece ginger (julienned)
- 1 shallot (chopped)
- 1 handful cilantro (roughly chopped)
