- 2 plum tomatoes (chopped)
- 3 pieces laurel (dried, /Bay leaves)
- 4 garlic cloves (peeled and crushed)
- 1/4 cup vinegar (or Calamansi/Lemon juice)
- 2 Tbsp. fish sauce (or Soy Sauce)
- 2 cups water
- 10 baby potatoes (may be halved depending on size)
- 3 medium carrots (peeled and chopped, roughly the size of baby potatoes)
- 1 onion (large, chopped)
- 1 red bell pepper (large, chopped, same length as potatoes or carrots)
- 1/2 cup tomato sauce (or to taste)

- 1 Tbsp. brown sugar (or to taste)

This turned out really good!! Used 1/4 cup soy sauce and 1 tbs. of fish sauce in place of the salt. Use Calamansi instead of lemon juice (check the internet for it),makes a big difference.

Delicioso!! I always cook this at home and everybody loves it! Easy to prepare and yummy!
