Soak wooden skewers for 1/2 hr before using. Moistened mixture with some water. Added a pinch cayenne powder and oregano to mixture. Bake 375 F 20 mins then broil <5 mins.

Great flavor. The seasoning is forgiving if you are missing something. I skip the skewers and just make patties and grill them.

I used part ground pork and 90% lean ground beef, didn't have coriander or mint so left that out. Added more garlic, grilled in the George Foreman on wooden BBQ skewers. Came out great!
