- 2 tsp. salt
- 1 pepper (guajillo, – whole, dried)
- 1 tsp. garlic powder
- 1 tsp. onion powder
- water (Enough, to cover)
- 2 pasilla chiles
- 1 guajillo chiles (from the beef stock)
- 1 cup beef stock (from cooking the beef)
- 1/2 Tbsp. Mexican oregano (dried, regular will work)
- 3 Tbsp. apple cider vinegar
- 1 Tbsp. lard
- 1 Tbsp. flour
- 1/2 tsp. salt
- 1 tsp. garlic powder
- 1 tsp. cumin
- 3 cups beef (shredded, see above)
- 8 oz. mexican chorizo
- 2 1/2 cups sauce
- 3 cups shredded cheese (pepper jack and cheddar are a great combo)
- 12 corn tortillas
- 1 cup green onions (chopped)
