- 2 large eggs (hard-boiled, chopped into bits)
- 1/2 onion (medium, finely chopped)
- 1 Tbsp. olive oil
- 1 garlic clove (finely chopped)
- 1 tsp. ground cumin
- 3/4 tsp. dried oregano
- 3/4 lb. ground beef chuck
- 2 Tbsp. raisins (optional)
- 1 1/2 Tbsp. pimiento (chopped, stuffed olives)
- 14 oz. tomatoes
- 2 Tbsp. juice
- 1 pkg. pastry (frozen empanada, disks, thawed, or homemade, recipe follows)
- 4 cups vegetable oil (and a deep-fat thermometer, if deep-frying)
- 1 egg (beaten with 2 teaspoons water, if baking)
- 4 1/2 cups flour (unbleached all-purpose, I used 1 1/2 cups whole wheat flour + 3 cups all-purpose)
- 3 tsp. salt
- 1 cup unsalted butter (cold, cut into 1/2-inch cubes)
- 2 large eggs
- 2/3 cup ice water
- 2 Tbsp. distilled white vinegar
