  • 1 tablespoon canola oil
  • 1 inch ginger (minced)
  • 1 clove garlic (minced)
  • 1 pound ground beef
  • 2 teaspoons curry powder
  • 1/2 chinese cabbage (finely shredded)
  • 1/4 pound green beans (trimmed and chopped)
  • 1 carrot (. peeled and cut into matchsticks)
  • 1 stalk celery (sliced)
  • 7 ounces water chestnuts (drained and sliced)
  • 1 cup chicken stock
  • 1/4 cup oyster sauce
  • 2 tablespoons soy sauce
  • 1 red chili (long, deseeded and chopped)
  • 1 teaspoon sesame oil
  • 14 ounces rice noodles (soaked and drained)
  • 1/2 cup fresh cilantro (chopped)
  • 1 ounce peanuts (crushed, optional)

    Directions

    1. Heat oil in a wok over high heat. Add onion, ginger and garlic and stir-fry for 1-2 mins until onion is tender. Add ground beef and curry powder and cook for 4-5 mins, until browned. Add vegetables, water chestnuts, stock, oyster sauce, soy sauce, red chili and sesame oil. Stir-fry for 1-2 mins until cabbage begins to wilt and vegetables are tender. Add noodles and cilantro and stir-fry for 1 min. Serve sprinkled with peanuts, if using.
