- 1 1/2 lb. skirt steak (1¼ to)
- 1 scallion (coarsely chopped)
- 1 jalapeño pepper (seeded and coarsely chopped)
- 1 cup fresh cilantro leaves
- 1/4 cup canola oil (plus more for cooking)
- 1 lime (about 2-3 tablespoons fresh lime juice)
- 1 tsp. salt
- 1 tsp. ground black pepper
- 1 onion (medium, peeled, halved, and then sliced, about ⅛ inch thick)
- 1 Tbsp. olive oil

- 1/2 Tbsp. olive oil
- 15 oz. black beans (1 can ,drained and rinsed)
- 1 tsp. cumin
- 1/2 tsp. paprika
- 1/4 tsp. salt
- 3 cups cooked rice (white or brown)
- 3 tsp. fresh lime juice
- 2 Tbsp. cilantro leaves (chopped, or to taste)
- 1 pinch salt
- pico de gallo (either store bought or homemade, see my recipe for easy pico de gallo)
