Excellent soup! It was very filling, and one I’d suggest using as a main course with crackers or bread and maybe cheese. I only used 1# of beef (had stew meat on hand). Everyone was very satisfied. Also, the directions say it makes 4 courses. In actuality, it is much more than that (just the beef broth was 64 oz). I also added 2 sliced celery stalks and 1 minced kale leaf.

As the directions say, “you’re going to want seconds.” My family loved this soup. It was meaty and hearty. I served it with a fresh baked loaf of french bread on a cold winters night.
