  • 1/3 cup apple cider vinegar
  • 1 roma tomato (medium, quartered)

  • 3 cloves garlic
  • 1 tablespoon dried oregano
  • 1/2 teaspoon ground cinnamon

  • 2 1/2 teaspoons coarse sea salt (or kosher)
  • 3 tablespoons safflower oil
  • 4 pounds roast (beef round, or brisket, cut into 4-inch chunks)
  • 1 pound banana leaves (or aluminum foil)
  • 12 ounces light beer (1 bottle)
  • 24 slider buns (small, brioche or challah buns are specially good with this!)
