- 10 guajillo chiles (stemmed and seeded)
- 10 ancho chiles (stemmed and seeded)

- 1/3 cup apple cider vinegar
- 1 Roma tomato (medium, quartered)
- 1/2 white onion (medium, coarsely chopped, about 1/2 cup)
- 3 cloves garlic
- 1 Tbsp. dried oregano
- 1/2 tsp. ground cinnamon
- 1/2 tsp. ground allspice
- 1/2 tsp. freshly ground black pepper
- 5 whole cloves (stems removed)
- 2 1/2 tsp. coarse sea salt (or kosher)
- 3 Tbsp. safflower oil
- 4 lb. roast (beef round, or brisket, cut into 4-inch chunks)
- 1 lb. banana leaves (or aluminum foil)
- 12 oz. light beer (1 bottle)
- 24 slider buns (small, brioche or challah buns are specially good with this!)
- pickled jalapeños (optional)
