- 3 Tbsp. vegetable oil
- 1/2 tsp. chili powder
- 1 cup shredded sharp cheddar cheese
- 15 oz. black beans (rinsed and drained)
- 2 sweet corn (husks, OR 1 15 oz. can sweet corn, rinsed and drained)
- 1 red bell pepper (chopped)
- 1/4 tsp. ground cumin (EACH, garlic powder, salt)
- 1 Tbsp. lime juice
- 2 Tbsp. chopped cilantro
- 6 cups romaine lettuce (chopped)
- 1 cup grape tomatoes (halved)
- avocados (chopped, optional)
- tortilla chips (lots of crushed)
- 1 avocado (large, peeled and pitted)
- 1/3 cup cilantro leaves (packed)
- 2 garlic cloves (peeled)
- 1/2 cup mayonnaise (real, I use light)
- 1/2 cup sour cream (may sub Greek yogurt)
- 1/4 cup milk (plus more as needed)
- 2 Tbsp. lime juice
- 2 tsp. dried parsley
- 1 tsp. dried chives
- 1/2 tsp. pepper (EACH salt, dried dill)
