- 1/2 cup beef drippings

- 1 Tbsp. Worcestershire sauce
- 1 sweet onion (large, sliced thin)
- 3 bell peppers (any color , though tri-color looks nice – roasted)
- 1 jalapeño (large, roasted, with or without seeds)
- 2 carrots (sliced)
- 5 cloves garlic (chopped)
- 3 celery stalks (with leaves, chopped)
- 1 Tbsp. dried oregano
- 1 Tbsp. sugar
- 1 tsp. red pepper flakes
- 2 Tbsp. balsamic vinegar
- 2 Tbsp. olive oil
