- 1 Tbsp. Tabasco Sauce

- black pepper
- 2 cans black beans (drained and rinsed)
- 2 Tbsp. olive oil
- 1 tsp. ground cumin
- 1 tsp. chili powder (more to taste)
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 3 Tbsp. unsalted butter
- 8 flour tortillas
- 2 cups sharp cheddar cheese (grated, more as needed)

Super yummy! Definitely not the quickest quesadillas I've ever made but it was worth it! I did use velvety instead bc I was running low on "real" cheese (still made a roux (1.5 tbs flour and butter) and added 1.5 cups milk to 8oz velveeta.. still delicious!
