  • 1 can chickpeas (drained, again, I use dry)
  • 2/3 cup red onion (finely minced)
  • 1 red bell pepper (large, diced, yellow or orange are nice, too)
  • 1 green bell pepper (large, diced)
  • 1/3 cup chopped walnuts (coarsely, or whole pine nuts, I often use sunflower or pumpkin seeds)
  • 2 tablespoons extra-virgin olive oil
  • 1/4 cup apple cider vinegar
  • 1/4 cup unsweetened apple juice
  • 1/4 teaspoon dry mustard
